I've talked on the Discord and the forums a bit about this, but I think there's a bug in 0.50.03 where cut gem and polish stone jobs never produce large gems or gem crafts. Is anyone that has cut a significant amount of gems (probably at least 1,000) in their fortress able to verify this?
